Allergens and Nutritional Information
Recent legislation has lead to demand for allergens and nutritional information like calories to be made available to customers.
This information can be stored in Opsimize against each Supplier Product.
As a reminder, a Supplier Product is the item as you buy it from your supplier.
Be default you will see:
Allergens: This is where you can record presence of any of the 14 recognised UK allergens.
Nutritional Information: This is where you can record the 8 nutritional details of food products. This information will be stored in the legally required format of per 100 g /ml. If the Supplier Product is bought in Units, and the Ingredient is also in Units, you will be asked to supply an "average item size in g/ml so we can proportionally allocate this information.
There is also the option to add:
May Have Allergens: For those who wish to record possibility of cross contamination.
As a reminder, in the UK, any business with more than 250 employees is required to list calorie information at the point of sale, for example the menu, or online platform
We strongly encourage you to obtain this information and enter it at the Supplier Product creation stage to ensure the relevant details are stored in the system.
Opsimize has the ability to assign the appropriate and proportional allergens and nutritional information from supplier products into production items and menu items. So as long as you have entered the information in the Supplier Product and have completed your recipes the system calculates everything for you!
Where to enter Allergens and Nutritional Information
For new Supplier Products the information can be entered as part of the standard procedure, please follow this guide for more information:
For existing Suppler Products the information can be found under
Suppliers > Supplier Products > <<Open Supplier Product>>
And then once you have opened your chosen Supplier Product, please click the Allergens & Nutritional Information Tab.
Please remember to click the save button once you have made any changes.
The system will then update all recipes and production items that contain ingredients with this supplier product set as the default.
Where to see Allergens & Nutritional Information
As a reminder, you can only set Allergens & Nutritional Information to supplier products. However it is possible to see the associated and proportional information on Ingredients, Production Items and Menu Items.
Ingredients:
Open an ingredient and navigate to the Allergen & Nutritional Information Tab.
If the Ingredient is in Unit, this will show the Nutritional Information in both g/ml and per unit.
Production Items:
Open the production item and navigate to the Allergen Breakdown and Nutritional Information tab
Menu Items:
Open the menu item and navigate to the Recipe Allergen Breakdown and Nutritional Information tab.
You can also see the breakdown on a per Ingredient basis by clicking the eye button in the Recipe Lines.
If the Ingredient is in Unit, this will show the Nutritional Information in both g/ml and per unit.
Overriding Nutritional Information:
We understand that not all customers want or are able to keep records of nutritional information for every supplier product. There are other ways of obtaining this information, such as through scientific testing or using historic food databases.
If you have this information already calculated, you can directly enter this into Menu Items and Production Items by ticking the "Update Nutritional Values Manually" button, and then entering the figures.
Once complete, untick the button and click the save button to store the values.
